Tomorrow is Valentine’s Day. Have you found yourself craving something deliciously sweet? Something indulgent, but healthy, and not so off the rails that you need to implement a new workout routine afterwards? I have just the thing for you : Easy. Delicious. Chocolate. Make them once and you will be hooked.
FINALLY! Healthy Homemade Milk Chocolate without the heavy cream, refined white sugar, high fructose corn syrup, artificial flavorings and preservatives! Ingredients:
· 1/4 cup cocoa powder/ (I use organic cacao powder), · 1/4 cup coconut oil · 4 Tbsp. honey, / here I will go with what sweet you like, instead of putting in 4 Tbsp., 3-6 drops liquid stevia, if you prefer instead of honey. I also use maple syrup instead of honey, or you can use Xylitol (be sure you grind it into powder form) 2 Tbsp. (or the amount of the hard part of the milk, keep the can in the fridge over 24 hours) full fat coconut milk · ½ tsp. vanilla · Sometimes I use also Almond butter (unsweetened) in this, 1-2 teaspoons of it. Instructions:
Melt coconut oil over LOW heat. Add the preferred sweetener and whisk briefly until dissolved. Whisk in cocoa powder. Add vanilla and whisk briefly.
If chocolate is not sweet enough, add more sweetener to reach desired level of sweetness. Add the coconut milk and place the mixture in your food processor. Process until is totally smooth like a warm fudge. You can spread it thinly on parchment paper, or poor it in silicone forms (I love my cute shapes), the mini molds make them the perfect size for indulging without overdoing it.
Break into pieces or take them out of the molds and serve. Be sure they are refrigerated all times, they melt very easily.
