When it comes to gluten free tortillas  , they are either too stiff to bend, too hard to eat or just nothing at all the way you remembered and like tortillas to be. But gladly I can say “Until now”! Yeahhhhhh....All thanks to Cassava flour.

These tortillas are delicious and require only 4 ingredients.

INGREDIENTS ¾ c. Cassava flour ( I buy mine on Amazon)  ¼ tsp. sea salt 2 Tbsp. olive oil ⅓ c. warm water

INSTRUCTIONS Whisk together the flour and salt. Add the oil and warm water until a nice dough begins to form. The dough should not be dry or too wet and sticky ( might need a little bit more water) .

Knead the dough until smooth. Divide into two balls and then three even dough balls from each piece so you have six dough balls ( but depends how thick or thin you like your tortillas)

Roll each dough ball between two pieces of parchment paper until thin. I like using a cast iron tortilla press.

Heat a nonstick skillet over medium high heat. Once properly heated, place tortilla on the skillet.

Wait for the air bubbles to form and then flip.

You can make them thicker , thinner, softer or crispier...they are perfect for tacos, fajitas and they are super easy and quick to make....Enjoy!
