The Kraut!

Rakott Káposzta, aka Baked layered Sauerkraut, but I guess we could even call it sauerkraut lasagna.
This dish may not be much to look at, but I promise you the depth of flavors are astonishing.
Ingredients:
1 cup brown rice,( I used organic sprouted brown rice)
1 cup sauerkraut
1/2 red onion
1 small hot pepper
1/2 tomato
1 cup Turkey meet ( could be chicken as well)
1/4 broth
1 cup paleo sour cream
1 cup paleo cheese
Salt, pepper,
1 tbs paprika,
1/2 tbs garlic powder
Organic butter

Cook rice accordingly, in a pan put a small amount of organic butter, add the onion and pepper, sauté for couple of minutes, add the tomato and sauté for 1 more minute, add the turkey meet.
Add salt, pepper, garlic powder and paprika. Add the broth and cook till meet is tender( I used my instant pot and used the stew setting for 5 min, it was amazing)
In a pan with a little bit of butter also sauté the sauerkraut for few minutes, not too much so it will not become too mushy.
In a glass oven safe dish, start layering the rice, sauerkraut, meet, sour cream and cheese, finish it with the cheese.
Bake it at 350 degrees, for 30 minutes...
The Kraut is a beautifully balanced, tart, meaty, savoury, spiced , and it is quite rich as well, a balanced meal all in one!
