Think outside of your mac and cheese box!

Ahhh macaroni and cheese....the beloved comfort food..

Make your own mac and cheese and dress it your way...my way was the paleo cauliflower mac and cheese! 

Ingredients:

1 pound cauliflower 

2 tablespoon of your choice of oil( I used organic sunflower oil)

3  cloves garlic

1 1/4 cups milk ( I used almond) can be water, and see how much you need as it is needed to thin

1tsp sea salt

1 tbs lemon juice

1/4 cup nutritional yeast

I roasted my cauliflower with the garlic cloves in my air fryer at 325 for about 25 min, but can be done in the oven at 400F for about 20 min...or simply steam them...it has to be fork tender

Place the cauliflower and garlic in your food processor or blender, add the rest of ingredients and blend  till very smooth...

I also added a little bit of butter and pepper jack paleo cheese only to the pasta 


It’s cheese, nutty and delicious!
