In my kind of tuna salad, everybody is a star, through team work, all of the ingredients are equally delicious, and believe me you want a little bit of each ingredient in every bite...

Let's get started!

As fish you can use a can of tuna, salmon or sardines

2 boiled eggs, finely chopped or grated

1 pickle, I use pickles in brine~ because there is no vinegar~ I dislike vinegar ~ and because of the amazing health benefits of the fermented pickles , finely chopped or grated

Homemade mayo

Salt and pepper

Optionals: 1 to 2 tbs:

Celery

Cranberry

Raisins

Onions

If you wonder how to make homemade mayo with wholesome natural ingredients, here I come..

1 organic egg yolk

A 1/2 tsp of organic spicy mustard

1 cup Olive oil -but here you decide how much mayo you need, so can be less or more ~ just be sure you add oil very slowly and carefully

1-2 tbs paleo sour cream at the end to make it creamer and tastier

Salt

First place the egg yolk and mustard and blend it with a blender, then start adding slowly the oil.

Mix all ingredients and Voila you got a healthy tuna salad that will make you think twice before you ever buy a pre-made one, you can eat it on its own, with bread ( I love it on toasted Genesis Ezekiel bread) or on a bed of greens..

I like to add to my sandwich few slices of paleo jalapeno pepper jack cheese, yummmyyyyyy.

Enjoy!
