If you like to talk to zucchinis, if a cauliflower can make you smile, if you like to waltz with peppers up and down the veggie aisle, I've just got the perfect show for you....
To enjoy a fresh , bright and lusciously rich in vitamins and antioxidants dish , this might be the one for you....it is filled with roasted veggies, Quinoa and drizzled with a deliciously creamy avocado tahini goodness...And ladies and gentlemen, the superstar of this dish is roasting!
I used:
1 cup zucchini
1 cup cauliflower
1 red pepper ( small size)
1 cup garbanzo beans
1/2 cup broccoli
1/2 cup green beans
1/2 red onion sliced
I used salt, cumin, coriander, pepper, cayenne pepper and smoked paprika for spices...1/2 tsp of each , only the cayenne pepper was a dash...
I roasted the veggies with my air fryer

For the Quinoa:
1 cup Quinoa ( roasted before boiling on medium low heat )
2 cups of water
Salt
For the Creamy Avocado Tahini goodness:
1 avocado
1 tsp lemon juice
1 small garlic clove
1 1/2 tbs tahini
1 tbs olive oil
Salt and pepper
Toss all ingredients together, and the result will be a bowl of pure deliciousness ....
So grab a fork and dig in!
