Let's taco "bout us baby!

I know right? Cauliflower Lentil Tacos? Seriously? But I’m not kidding , you have GOT to try this mixture of cauliflower and and lentils. With just the right amount of spices you will NOT believe you’re eating only vegetables !

I've got inspired by a friend, she promised me I will love it...and she was right!


I stared out with making the season mix for the cauliflower and the lentils...


2 tbs coconut oil

2 tsp cumin

1/2 tsp garlic

1/2 tsp onion

1/2 ground mustered/fennel seeds

1tsp salt

A pinch of tumuric

1/4 tsp cayenne pepper

1 tsp Hungarian paprika


Next I coated and roasted the cauliflower in my air fryer, at 360 for 10 minutes


Then I made my lentils in the instant pot


Next you coat the lentils with the same base as the cauliflowers, roaste them about 10 min at 360 or just add the base to the lentils and use them ..

I am using this tortilla


And for a lovely and refreshing finishing touch I made a cilantro sour cream cheese sauce...


Vegan sour cream, cilantro , vegan cheese and adobo spice...

And here it is...I garnished it with radishes...voila...bon appetite!!
