Do I smell the aroma of waffles?
When you make this recipe such an amazing aroma fills your whole house, you think you are walking through a fancy European bakery...and the freshly made fruit sauce is the best!...I remember my first waffle, maybe junior high, it was called Gofri, I remember the street in Hungary were we bought it from, the aroma and taste were just out of this world...so have fun and spoil yourself and your family with these waffles, they are naturally sweetened, gluten free and oh did I mention they are insanely delicious!

* 2 eggs
* 2 cups gluten-free flour ( I use Arrowhead organic gluten free pancake and bake flour)
* 1–3/4 cup coconut milk
* 1/2 cup ghee, melted, I used organic butter
* 1 tablespoon honey
* 4 tablespoons baking powder ( no need for this if you use the flour I use)
* 1/4 teaspoon sea salt
* 1/2 teaspoon vanilla extract
DIRECTIONS:
1. Beat eggs until fluffy. Add flour, milk, ghee, honey, baking powder, salt, and vanilla until just combined.
2. Lightly oil preheated waffle iron. Pour 1/2–3/4 cup mixture into waffle iron and cook until golden brown
Fruit sauce:
* 1 ½ cup frozen mixed berries
* 1/2 cup maple syrup
* 2-3 strips of lemon zest
Combine the mixed berries, maple syrup and lemon zest in a medium saucepan. Cook for 10 minutes, stirring occasionally, on low heat or until sauce has reduced and slightly thickened. Remove the strips of lemon zest and serve the sauce warm or cold over waffles.
